Blueberry curd bun- taste delicious!
Blueberry curd bun – a piece of the north for your coffee break.
A soft bun, rich curd and blue blueberries from the forests of Lapland combine to create a treat that tastes like the freshness of northern nature.
Bun dough:
5 dl milk
1 egg
2 dl sugar
1 tbsp cardamom
1 tsp salt
50 g fresh yeast or 2 tsp dry yeast
about 900 g wheat flour, or about (14 dl)
200 g butter or baking margarine
Filling:
200 g lemon curd
1 egg
1.5 dl sugar
1 tsp vanilla sugar
3 dl blueberries
Greasing the buns:
1 egg
Granulated sugar on the surface of the buns
- Warm the milk until it is warm
- Mix the fresh yeast, sugar, salt, cardamom and egg into the warm milk.
- Gradually add the flour to the dough and continue kneading.
- Melt the butter and add to the dough. When the dough starts to pull away from the edges, there is enough flour
- After this, let the dough rise for 30 minutes.
- Preheat the oven to 200 degrees
- Divide the dough into equal-sized pieces and roll them into balls. Place on a baking sheet lined with baking paper. Let rise for 30 minutes.
- Prepare the filling by mixing the ingredients together, except for the blueberries.
- Press a hole in the middle of the bun, e.g. with a drinking glass, for the filling
- Brush the edges of the bun with egg
- Put about 1 tablespoon of the filling and blueberries in the hole. Sprinkle granulated sugar on top
- Bake for about 12 minutes until the buns are a beautiful color
